i have a lot of solar panels but whenever it turns night my factory basically dies, i combated this with 100 steam generators, when i had 50 of them they made around 25-30 but now with 100 im barely cutting 10, why does more mean less?

First thing first : When you use Boilers and Steam engine, the optimized ratio is to have 1 boilers feeding steam into 2 Steam engines.
There are many places in your set-up where you have a boiler feeding steam to 3 steam engine, and these 3 will not produce more electricity than 2 steam engines.
Secondly, you need to make sure all your steam engines are linked to your electricity network. It seems OK, but you can easily make sure by clicking on an electric pole in your factory to check how many steam engines are linked to it.
Also, in your screenshot, things are OK as far as coal is going, but you should make sure it's also the case when you are low on electricity : is there coal on the belt in front of each boiler ?
Finally, if you have electricity problems sometimes, I recommend to replace some of the boiler coal inserters with "burner inserters" so your electricity does not rely on having electricity.
But, other than the "3 steam engines instead of 2", I don't find anything that stand out...
