I have completed the install but it only gets to the bootloader niether linux or the efi fallback are working.

I too have encountered this (or a similar) problem.
I have a Lenovo Flex 14 from 2019, or something like that.

is secureboot activated in your uefi settings?

Yes a common issue for this happening is raising from secure boot activated, check that out the status

Secure boot is off. I've checked multiple times.
I'll check for additional hidden settings.

Yes, "legacy not mode" and no other hidden settings.
