You could technically do both. Ordering a Coop from Robin and while it builds, progressing further into the mines gives benchmark rewards every 10 levels or you could potentially find a better weapon while clearing.

It takes some practice for sure. You can buy the training rod if you're really struggling for 500g from Willy's shop. It will give you a level 5 sized fishing bar to make it easier and slows the rate the fish gets away. You'll be limited on the fish types you can catch with it though, but it's a possible option until you've leveled your fishing skill up enough to swap back to normal rod fishing.
