His cabin is full of jars/tanks that he stores cool bug specimens in.
His idea of a date is going out into the woods and digging around dirt looking for cool bugs

A compelling character is anything from a character the audience relates to and sympathizes with to a character that the audience simply connects to in some way

One thing to remember about SDV slice of life is the fact that the farmer, 9 times out of 10, is joining a small and tight knit community that they never had much of a part of before
How do they feel about that? What does this show us about them?

You can build a compelling character from those two questions alone
For example, with Jackson-
He's excited at the prospect of being able to manage his grandfather's farm, but is highly anxious about leaving behind everything he knows. His anxiety shows when he goes to meet people for the first time, and he feels a level of self doubt when he sees the state the farm's in. This shows us that he has self confidence issues and severe anxiety, one he tries to hide and the other he can't. It also shows us that he's willing to try and conquer this to carve out a new life for himself
There's a level of stubborn pride there
Ask these questions as you write and develop your character and you'll have effectively created a person in no time

I think you need to take time and seriously study figure drawing and the like before you tackle something semi-realistic. It's a very common art critique, but you need to know the basic rules of anatomy before you can safely break them in any way

Sit down and practice figure studies when you can if you want to tackle anything resembling realism, and make sure that you honestly understand what constitutes realism. As it stands now, I honestly can't say your style lends itself to realism at all but rather a standard pop art or graphic cartoon style

For specific proportional areas to focus on- your hands and feet are too small, as are your arms. Arms should end with the fingers at least halfway down the thigh

Part of the thinness issue is the fact that your current figure is also extremely long, mostly in the legs.
If you broaden the shoulders a bit it can help with the weight issue and fill her out some
