Are you on build 41 or build 42 saw it in the log. make sure all your mods are build 42 compatible. 9 times out of 10, any build 41 mods will stop the server from starting
There's nothing in the log that is pointing to a specific mod, just a generic sprite error. You'll need to narrow it down by turning the mods on one by one, or in your case as you're using a lot of mods, half by half to see if you can find the mod causing the issue.
Also try disabling all mods and launching a vanilla server, just to check it isn't an install issue.

Outdated unstable will just give you more issues as some mods now wont work there.
It's worth starting a vanilla server with no mods to rule out any install issues before assuming it's a mod issue.
Yeah ive started vanilla works just fine, the mods are just outdated or just dont work

I dont recall zomboid ever getting fucked up that bad about mods

Can you try doing a full reinstall?
First, uninstall the game, then go to "Steam\steamapps\common\ProjectZomboid" and make sure there are no leftover files or folders there.
Also go to "Steam\steamapps\workshop\content\108600" and make sure that folder is empty.
After that, go to “%UserProfile%\Zomboid” and delete everything there except the “Saves” folder.
Then just install the game again and see if that helps.
Turns out you have to disable lua check in server settings
