Unstable refuses to load what so ever. I have tried loading it twice with both lanuchers.

they should be named "hs_err_pid", if there are none there then none have been created, which is fine.
Can you go to "Windows Reliability Monitor" (just search "Reliability Monitor" in the start menu) and see if there are any crashes there for PZ? If there are can you click on them and send screenshots of the errors?

Can you try doing a full reinstall?
First, uninstall the game, then go to "Steam\steamapps\common\ProjectZomboid" and make sure there are no leftover files or folders there.
After that, go to “%UserProfile%\Zomboid” and delete everything there except the “Saves” folder.
Then just install the game again and see if that helps.
