Hate to say it but it sounds like you have mods.

Update: Was able to fix all of aforementioned bugs through debug menu. Still don't know how they happened

I was playing on b42 unstable without mods.

I was able to find out through debug however that my character's core temp stat is NaN, so technically still bugged. I tried various mods from the workshop to hopefully debug it but it seems like the save file is corrupted.
