As the name says, I host a server to play with my friend and we wanted to spawn some items to mess around with zombies, but none of the "add 1, 5, etc" buttons do anything when pressed, even when alone on the server. I have admin perms and don't seem to have issues with anything else from the admin panel.
I've tried looking up similar issues but the only ones I find are people getting errors where as I don't even get any errors. Simply nothing happens or is added to my inventory.

Can you share a recording of the issue? And do you have any mods enabled?

No mods, I'll get a recording.
Aerosol bomb for example, but changing the item, quantity, player, etc does nothing. Can't spawn items no matter what. Perms is Admin using /setaccesslevel

I just tried reproducing it, but the bomb spawns perfectly fine
Therefore, to check for any game install issues on your side, can you try doing a full reinstall?
First, uninstall the game, then go to "Steam\steamapps\common\ProjectZomboid" and make sure there are no leftover files or folders there.
After that, go to “%UserProfile%\Zomboid” and delete everything there except the “Saves” folder.
Then just install the game again and see if that helps.

Right, deleting everything including the "server" folder I needed to host it wasn't a really good idea, so thankfully I made a backup of it.
Only folders I kept is "saves" and "server" (Had to keep servers, cant host otherwise)
No change whatsoever with the items list viewer. Aerosol bomb was just an example, tried around 5/10 different items, nothing is being added to my inventory

The server folder is not needed the host, you just make new server settings files for hosting
Deleting it was necessary to rule out any server settings issues
Did you also delete the leftover files in other folders, that part is very important, otherwise all of this is for nothing

The thing is that if i don't have the "servers" folder I literally cannot host the save we play on anymore because I host it from the dropdown menu and it's in the "servers" folder you're asking me to delete (which I backed up). In my "saves > multiplayer" folder I have the save we play on but no way to access it. When going in to the Host tab I only have the option to recreate a whole new server, settings & character. Not re-host a pre-existing save, and if I do, I can not find how.

We might need to rule out any save corruption as well, in which case hosting a new save as a test would be important.
You can host a secondary server by clicking Manage Settings > Create new server settings
Then you can see the new server setting from the dropdown menu
