whenever i set a password in the config file of my server and start it the password reverts to no password. how do fix this?

Did you add special characters to the password? Can you change any of the other settings in the file?

No special characters, most other settings can be changed

Im using docker if that affects anything?

It could, some docker configs might force a password in their settings

So if you have one of those, it could constatly be wiping the password
