When B42 moves to stable I plan to run a server that'll have ~14 players, whilst running ~50 mods tops. Should I worry about server performance if I'm running through the Host tab on the main menu?

Will my machine be enough to handle all that load? My specs:
GPU: RX 7900 XTX
CPU: Ryzen 7 7800X3D
RAM: 64GB DDR5

This isn't some excuse for me to flex my PC here, I'm genuinely questioning the black magic behind MP running on a game that has been continually built upon for 13+ years, and if my system would have to compensate for any of the said "magic" to make it work

Well no cares if you are flexing your build. There are people on here who would happily make you feel like a poor noob despite the decent build.

To answer your question, build 42 is probably quite a ways off from being the stable build, you may as well not even wait. Its not perfect but its as playable as zomboid ever was.

The code has been updated over the years and at this the studio is a real studio and not a couple of homies working on a passion project (although it is still that too). There is no magic to make to work other than understanding networking; or if you rent a server even less of an understanding.

Your 64gb of ram... I assume you run windows 11, so even idle youre probably using 10gbs of that. Fortunately even a heavily modded zomboid server can function off 16gb of ram but for 14+- players youre going to want to allocate a bit more.

Now where you face the problem might be your processor. How fast is it? This game tends to bottleneck at the processor and with 14+- players your going to want 3ghz minimum.

Most game server benefit from less but fast cores. 32 cores doesn't help a game run well on a server, single core speed does, to keep it simple.

Just dont go crazy on other processor heavy tasks if you use the PC for general purpose and you shouldn't have any issues.
