Heyho. I am currently Hosting a server and a couple of friends map, the one you open with M, reset itself. It never happend to me.

Did your PC IP change perhaps? Since map data is tied to the server IP

Hm, I cannot see any hosted server logs for some reason, can I ask how you are hosting the server exactly? Are you doing it through the Host menu?

Good question, it shouldnt happen on a dedicated server.. however the logs you shared seem to just show a spam of errors
I might suggest deleting your server files and reinstalling them from SteamCMD again, then launch the server and share the logs so I can check if the errors are gone?
Your save should be fine since you are not touching it
