When I hop into a car, the dashboard doesn't show up. I'm frustrated about this because a WHOLE save trying to fix it. I have no idea what could be causing this. The main menu buttons are a lot bigger than they usually. Plus the main menu screen seems to be zoomed in. The context menu as well as every other ui thing seems bigger.

This is not save corruption. It's a UI scale/resolution problem. When UI scale is not functioning correctly, it'll cause the vehicle dash to draw off-screen and make all menus appear enlarged. Deleting the options.ini should resolve the problem. This should be listed as a UI bug Report here:
