I have broken my leg twice thrice trying to build on the roof but thats really more of a universal issue

Oh btw if you want to build on the roof its already solid unlike most buildings, so you don't need to place down floors

you can pick them up, put them in a big trash can and delete them or dismantle them

40 hours in real life, 3 and a half months in game, if you know what to do, you do it faster but it's okay to take your time
