64, Sunshine and Odyssey try way more not to show the setpieces (though, in all fairness, it's still a thing but not as much as 3D World for example)
but overall, it's just a matter of taste
for me, 20 years of playing Mario games eventually just mashes together how you can just abstract Mario games into the basics and I just can't help but notice how levels are nothing more than the same pieces put together in different ways

If it's like Breath of the Wild and Tears of the Kingdom, they will not restrict the NS2 Edition cartridges from being inserted into a Switch 1, and will run as the original Switch 1 release does
It's only when you insert it into a Nintendo Switch 2 itself that it becomes the upgraded, expanded title, as the Game Cards are red versions of Switch 1 card with the Switch 2 content on board, unlike proper NS2 exclusives where the Game Card has a notch that prevents it from being physically inserted into a Switch 1
Fun fact, because my copy is digital (having owned the original since release), during the prerelease period where the Switch 2 upgrade pack is not out yet, it will launch as the Switch 1 game and change the icon to suit

essentially, the NS2 Upgrade Packs act as DLC
an NS2 Edition Game Card has said DLC on board
So unless you have a very specific reason to get the NS2 Edition card (like collection purposes) it's probably far easier on the wallet simply to upgrade your Switch 1 game
