Does stripe webhook need to point to preveiw or live deployment. Currently set to live but keeps returning 500 error for subscribers and web secret is correct and correct 6 events enabled

Your stripe needs to be connected to your Live production website not your preview. but for best practices you should test internally first to ensure it's working first.
