Im trying to put the biggest solid fuel rocket booster on the biggest side connector thingy and either 2 things happen when I do.

The booster only connects to one of them (I have 3)
Or the booster visually (In the VAB) ignores the connectors and connects to the rocket instead.

Please help, this will be my first space shuttle!

you can connect the booster only to one decoupler. use struts for more stability

Do they use more than one decoupler in IRL (NASA)?

yes. but that you can only use one decoupler is because the way ksp conects parts
