I tried with different engines, but some ran out of fuel too quickly and others were too low-powered, any advice?

rapiers are pretty shit, however they'll start ramping up at around 400m/s, then at 20km you can either switch them to closed cycle (uses rocket fuel) or just use nervas

you will want a nerv engine for when you're in space if you wanna get furher than LKO

yep, its also good because they dont need oxidizer, so you wont need to pack copious amounts of oxidizer

you could in theory use a Dawn if the SSTO is fairly small
