Some random ones here maybe
Random one that I put up with a lot on my DK but fixed on my hunter, where CC is more pivoal, is maintaining a focus target via a macro on one of my spammable abilities. For instance, on survival:
#showtooltip Mongoose Bite
/focus arena3
/cast Mongoose Bite
so when a target drops focus (stealth/shadowmeld/etc), they're quickly re-focused just by doing my rotation
beginning of each arena I change the "3" to whichever is appropriate for the match. If you are the type to switch focus around more, might not work for you.

Against a few matchups, DH in particular, in starting room I dismiss my pet, camo before gates, then call pet
lets you send them in against the DH you can dash and/or kill command without dropping camo
I do it against some other comps too, like against rdruid or mages. Sometimes against DK to bait out their aoe in the wrong area (e.x. pet move to an area where I'm not, they think I might be near it so they DND)
useful to have pet mortal strike up while I'm still in stealth if I'm positioning for a stealth trap, as an example

against lots of comps you can prevent people from playing the game with good scatter + steel/tar trap. Make that convenient for yourself to do, whatever your preference. Mine is mouseover for scatter, and @desert bloom on my traps
i.e. war charge you can scatter + steel
can deny them uptime, cc them during their cds, depending on what the team has

Also don't sleep on steel trapping healers. steel trap on a healer behind a pillar with their dps in midfield is as good as a freezing trap (some have freedom ofc)

I'm not an expert in kiting by any means, but depending on your spec just practice a lot and learn what you trade out for what. Tank pet can be tempting sometimes for heal usable while stunned, but I find my value out of master's call far outweighs it
you can start with practicing scatter + steel trap, tar traps, disengaging roots asap
for each skirm/game you do, just focus on one at a time and slowly it comes together
i.e. against this priest/war team, I'm going to scatter -> steel trap war on his stun as often as possible

a good way to make yourself not the target in games is to prove you'll be hard to stick on early. For my first round of shuffle I play as far back and defensive as possible, and I find people tend to go on me less
