Congrats for releasing the demo Pepperlog! Having the same issue here through Proton on Linux. Trying to set the game to Windowed mode as ultrawide support seems to be not yet implemented.

You can change the settings, but after clicking confirm no changes apply and reopening the menu has the settings back in their original setting (defaulting to 1080p and fullscreen).

Based on the save directory being generated it doesn't seem like such config settings are being stored.
