I'm having the same problem. Before the update it worked fine.
Now in SP and on my dedicated server I cannot shoot anything with the ship's cannons.
I tried replacing the cannons. verify game. join other server. Even the NPC's don't shoot the cannonballs from their ship. I see the animation but nothing happens

I had the same, turns out it was because i was in bonfire range with the ship

Same for me. Cannons fire but no balls are being shot. Even ai ships aren't able to fire their cannons.
I'm playing on dedicated server.

Before this update you were able to fire cannons within the bonfire range just fine, so something they did in the update is causing the cannons to no longer work inside bonfire range. Really hoping this was not done on purpose.
