Thanks for the report! This issue is caused in most cases either by playing with mods or by Steam Cloud corrupting the saves during sync. We're still working on a fix, but for now we implemented an auto backup feature to help to avoid losing progress.
HOW TO RESTORE BACKUP
Go to:
• C:\Users\ %username%\AppData\Local\R5\Saved\SaveProfiles\ %your_Steam_ID%_Backups
• Select the latest backup (or any preferred one). Backups are named by date and time.
• Copy all contents from this folder (it should contain one folder + AccountDescription.json).
• Navigate to:
C:\Users\ %username%\AppData\Local\R5\Saved\SaveProfiles\ {your_Steam_ID}\RocksDB
• Paste the copied files there (replace existing files if prompted).

Instead of the latest backup (since cloud auto saves during a crash) try to restore the save above the last one.
Or just do everything all over again since you are stuck (in most cases) we have noticed.
