This happens due to local save corruption.
You'd have to roll back to previous save or remove it entirely depending on how many backups are already corrupted.
Local saves are in (no not in SteamApps, here):
%LOCALAPPDATA%\R5\Saved\SavedGames
Generally and till the devs find better saving system, disable Steam Cloud and avoid it syncing between different devices.
I just had this issue. Replaced the corrupted saves with an older one and it worked. I think the problem started when I tried the game on another device.
Cloud saving when its not allowed to finish can cause a lot of problems.
Thanks for the report! This issue is caused in most cases either by playing with mods or by Steam Cloud corrupting the saves during sync. We're still working on a fix, but for now we implemented an auto backup feature to help to avoid losing progress.
HOW TO RESTORE BACKUP
Go to:
• C:\Users\ %username%\AppData\Local\R5\Saved\SaveProfiles%your_Steam_ID%_Backups
• Select the latest backup (or any preferred one). Backups are named by date and time.
• Copy all contents from this folder (it should contain one folder + AccountDescription.json).
• Navigate to:
C:\Users\ %username%\AppData\Local\R5\Saved\SaveProfiles{your_Steam_ID}\RocksDB
• Paste the copied files there (replace existing files if prompted).
