After I got to the second island when exploring, a loading screen randomly appeared and it was stuck on loading loop, I had to alt + F4. After reloading the game I was in the same spot but my inventory was from some waaaay earlier time snapshot like an hour earlier, quest I have already finished somehow becomed unfinished, after exploring for few more minutes again random infinite loading screen.

Thanks for the report. Are you playing online on a server? Or did this happen during solo-offline play?
It seems like Steam Cloud saves overwritten your progress with an older save. Please turn Cloud saves off
and check if this happens again

It was solo offline, ok I will disable steam cloud save.

Still getting random infinite loading screens, having to alt+f4 every 15-30 minutes, however there are only minor save rollbacks.
