There’s quite some videos about it on youtube, they might not be the most in depth considering you also have to filter for champions your team plays etc. but they are pretty okay

imo, almost no one really understands draft theory all that well (pro is getting better there, but pro drafts are very much a function of the player's champ pools and so are not necessarily that instructive to learn from)
