My MF is 68% win rate with 53 games played while my Jhin is 16 games and 50%(All my other champs have a small amount of games with lower winrates, my Seraphine is 75% but only 4 games played). Once you commit to being a one trick is there a way back/Any reason to not be one?

to stop one tricking, slowly move away from your one trick and play the champs that have your interest in norms until you feel you have sufficient knowledge about them because the muscle memory might still stick and it'll need to be broken

In terms of reasons not to be a onetrick, you'll be in for it if your champion is banned/picked by the enemy team/hard countered. That said, you can still be a onetrick while having a secondary pick for those situations; viable options are to pick a very similar champion in case yours is banned or picked, or to pick a champion that counters your main's weaknesses for counterpicks.

to not be a one trick, check the champs ban rate

#

the highest ban rate champs are probably not the best to one trick

you'll win a lot on that champion and climb well most likely, downside is you are stuck with that champion

also keep in mind that the more unique the champion's playstyle is the harder it'll be to play anything else

Miss Fortune is a fairly generic ADC, so it should still be feasible to play something else, if suboptimal
