So sometimes I'm able to read my laner's body language or junglers pathing and then I'm sure they will come top lvl 2 or lvl 3. What do I have to do there? Just back off and lose farm and xp? What then

If they freeze on you you literally just have to grin and bear it. However, if your jg is also topside you can try to ping that you're going to be ganked. Then they can try to setup a countergank.
If you detect the enemy jg started bot then they'll probably be top from 3:15 to 4:15, so it's up to you to manipulate the wave so that it's closer to your tower than theirs

What about a lvl 2/3 gank? Where they start top and either immediately gank after buff or clear that side and come?
