Unless you're like a huge M+ pusher, being with raid gems is totally okay. The only thing you should use your gold on, should be changing Azerite traits if needed. They'll have a much bigger impact compared to gem/enchants
And for TB, well i've ran some keys with it (mostly due to me forgetting to swap talents kappa) and it felt pretty much the same. Feel-wise & damage-wise, you just use them differently

I keep finding tanks this week chain pulling in 10 to 13 keys leaving a mob on 5% hp snared and run into next pack. How bad of a total dps loss is that for sin? It's not like the timer was failed, actually had some good times but I know personal dps takes a big hit.

Pretty big loss, and obviously gets bigger and bigger the more SS traits you have. You should just ask him to let you re-stealth. It should also help the healer to get micro mana breaks
