The helmet's from RF siege of org, and the swords require like prestige 15 or so I wanna say. Pants are from completing heroic ToV, which should be real easy to pug. I feel like the lower ones should be a-okay at your ilvl solo.
The only boss with stuff you really need to watch out for is Blackhand if solo. During P2 (after the first drop), make sure you are between the boss and a wall, not a balcony. That way when he smashes it won't send you into the balcony and reset the fight.

I do much prefer getting to see the whole story of a zone, rather than doing 10 quests there and suddenly outleveling it. The increased mob health also allows us to better familiarize ourselves with the rotation and playstyle of the class, rather than grinding out to 110 and suddenly realizing, shit, I hate this class.

I leveled back at the end of tbc and back then you didnt have fancy arrows or highlights on ur map and everything. I got to experience the quests by reading guides and the quest descrip and figuring out where everything was.
After doing it once on my rogue I cant stand to do anything a second time

So just looking at some of the data mined mog it looks like we might be seeing different sets from each leveling zone - each dungeon (with different shades for each difficulty) - warfronts (with different tier levels from difficulties)
Not a ton of leather previews but Its what I figured mog would be from when they announced at blizzcon - all leather is going to share the same mog options but we're going to have a million different mog options thrown at us
