Would anyone be able to help with getting me started? I'm not sure how to, every time I try and read up on the basics or watch a tutorial, my brain just won't let me.

I can't seem to retain any information I learn and whenever I actually begin to start working on a project, I get overwhelmed and quit before I can even make a scene.

This is about the 4th time in the past 3 months i've tried to start using Godot. I've been using Construct 3 to make games for about 3 years now, but I'm really looking to get away from visual scripting, and it hasn't really felt like any of the skills transferred from it.

Is there any resources someone might have that'd be able to keep me engaged or on the program without me instantly forgetting, or do I just have to keep pushing through?

set a time for your learning.
Set an alarm on your phone, then every day at X time you dedicate 30 to 60 minutes to reading up the basics. If you still want to continue, do so after a small break.

When applying your knowledge set a goal, an easy one. Just making the character move could be one.

Most software development techniques are about managing workloads, both in practice and mentally.

keep in mind you are jumping straight to coding, there are a lot of basics on programming that you may be missing and that will make this difficult
