Usually the path height is marked by rulers. Raised above ground you need to lower. Underground = you need to raise.
A lot of people use also additional hide me/see me signs. The ruler is already an improvement compared to PlanCo.

It is possible to include paths in blueprints now so it’s a lot easier.
Also what do you mean by custom rides?

Do you have a park entrance placed? If the queue is connected to a path then chances are it’s because it’s not detecting a park entrance
Also just because one thing probably isn’t working properly for you doesn’t mean the game is “unplayable” or “stupidly made”. Just saying.
