I have a single proxmox server that I am thinking of installing pterodactyl onto.
Would you guys put panel on one small VM and then create multiple VMs to act as node and install wings onto or would you recommend putting everything on one big panel+node vm?

It is really up to personal preference, on my proxmox, I did Separate panel and wings vm as I am trying to do 1 process/service per vm or lxc

It depends on your environment. If you're a host you want separate VMs for security. If not, you probably don't want the extra overhead.
Mine is a test environment, so I used a separate LXC container for panel and for wings. I wanted to see if LXC would work well enough; no problems so far.
