When I launch the game in fullscreen and tab out at any point, the game icon doesn't appear on my taskbar so I can't get back into the game. I end up having to alt f4 and relaunching. If, however, I launch the game in windowed or switch to windowed before tabbing out then the game will appear on my taskbar and I can click back into it.

I had the same issue. For an interim workaround and to avoid closing the game altogether you can alt+tab or open task manager and bring game window to front from there.
