Ive been playing a lot of demo and escorty with a friend around my level. Though , all our games have been unfair. Our team members have been level 80 while the other teams level 200 and it wasnt bots. please please please can we fix this !! It makes the game less fun when we match with people way higher than us

Level doesn't represent skill at all. It only represent how much time is spent playing the game. It's not comparable!
What's more comparable is the ranked tier, and that's still not considering smurfs and alt accounts.

this is TDM and it doesnt get affected by MMR
demo do get affected by match making but no rank so you get elec quark in the lobby
