Why is it that every time i get back into playing fc 26, it's like playing a new game. I adapt my playstyle to do one thing. I get back to playing the game a few days later, it rarely works anymore.

I'm not super good at the game or anything, I'm div 4. but like it's just incredibly annoying.

Because the “feel” of the gameplay isn’t mostly based on the connection. If the connections good, I can dribble and react and it’s a faced paced game. If the connection is slow and sluggish, it’s like playing a game of chess and passing between static players.
Nothing will change until they fix or change the net code.
