The UI makes it clear this should be possible but whenever I select one team, the ability to switch to the other category is greyed out. It seems the functionality is not all there.

Yes, above each team you can select if you want to pick from the Men's pool or the women's. Why would that be there if not for the purpose of pitting men's teams vs women and vice versa?
