It's better you start by https://docs.aihub.gg/essentials/how-to-make-ai-cover/ (with Applio), remember also that the quality depends by how good is the trained RVC model

None, quality doesn't change
rvc v2 quality is stuck as it was in 2023
the original devs left it to rot
mainline is original rvc
aicovermaker is just automated process to make ai covers, based on Applio
applio is a fork with extra features like TTS and performace updates and easier ui
for ai covers only, i'd suggest aicovermaker in ur case
