My argument towards the ||Ki-Adi Mundi controversy: I just rewatched the scene and they never state that it was a Sith, only another force user. To quote the Jedi standing next to Ki-Adi Mundi "could this be a splinter order, or something worse?" That is the closest they get to saying "sith". They address the fact that Mae's master is a rogue Jedi, but never a Sith. Vernestra even says "How odd. She turns up all these years later trained by one of our own." It doesn't break canon whatsoever. If that's not enough to make you think otherwise, than you're not paying attention to the dialogue. For a bit of extra evidence, Vernestra also says "we must find out who trained her."
TLDR: They know Mae's master is a force user, maybe a Jedi, but they never directly bring up the possibility of him being a Sith/Sith lord, as evidenced by several quotes in the scene.||

my personnal take on this fight always has been based on Dooku personnality. For me he was always on the "chill side" of the dark side and took this fight as a fun exercise, especially with the banter. He quickly dismissed Obiwan and was hoping to test that young boy everyone was yapping about. And since Anakin was still skillfull, Dooku pretty much started going full in until he went to far bcs of his experience/dark side arrogance, wrath/ or bcs he expected Anakin to be a bit better
