Like because your gamma has armor, if you see anyone flying at you, say an OFA Deku using his gamma lock on or a Tamaki using his beta, you can just press gamma, and catch them out of it. Where if you try to melee first in that scenario, you lose.

Also, what's the recommended leveling? I max out my Beta then my Gamma because I find the beta easier to hit

Maxing out beta isnt bad, personally I prefer maxing out gamma just cause the healing is ridiculous.

Some people will suggest putting 4 levels in alpha ASAP cause you get that third charge, but the alpha can be so janky sometimes I dont think its worth
