I was browsing the Microsoft store on my series s (which I bought used) and some games that are paid are written "install, you can play" and I didn't pay for this game and I don't have any kind of subscription on my account

But the games I saw this happen in were Minecraft, Fight Night Champion, UFC, JEDI

If you do not own the games yourself, and no one else within your home does, then you should not play them.
Those are likely owned by the previous owner of the console and they've not yet changed the home console for their account.
Accessing their owned content violates Terms of Service.
