my cousin gave me his 360 a few days ago and I decided to try out gta 5 on it. I put the first disk in and it told me to put the second disk so I assumed it had been previously installed by him. Once I put disk 2 in it was stuck on loading story mode for 30+ minutes. Im probably being inpatient but is there something wrong with the Game?

Honestly dude that’s a game that never should have been put on that console. My best recommendation is to just play gales that were really made for the 360 because while it will work, it’s gonna be miserable.
