#Help with Freesync/VRR

Hi, for the past year I've been using an Xbox Series X with a dell G2724D. I am running the HDMI cable through an audio extractor, using the optical out with my Fiio K7 (with a variety of headphones).

When I got the monitor, all I had to do was enable "console mode" and I was able to select 1440p 120hz + VRR without an issue.

A few days ago I got an AOC q27g3xmn to enjoy the HDR 1000 on my pc and potentially the xbox.

The problem is, for some reason this AOC refuses to let me enable VRR through the audio extractor. Direct HDMI connection works perfectly (I could see the flicker).

Thing is, it's almost impossible for me to keep buying extractors for 30-50 usd, hoping they'll work and just returning a bunch. I really need my headphone amp because a controller can't drive the Hifiman Sundara.

My question is, if I have freesync pro premium enabled on the monitor side, with the VRR option grayed out on xbox, does it still sync the framerate to the refresh rate?

Also, how vital is VRR in general? I pretty much only play single player games.
