Whenever I try to record a game clip on Fortnite Xbox series s it always turns out super choppy when I watch the recording, how do I record clips at 120 FPS? (My game is already at 120fps so that’s not why)

Recording game clips can't be done at 120 fps. Your console is also using majority of the graphics processing power to run the game at 120 fps, which is why the recording is coming out choppy. You'll likely get a smoother video clip by disabling 120 Hz and letting the game go back down to 60 Hz

Like on YouTube all the clips are super smooth but then mine is so choppy
