If I have an EAFC25 Xbox Live key, and I redeem it on my PC, can I also play the game on console (Xbox One)?

That is not a Play Anywhere title. If you have a key for PC, it's playable only on PC. If the key is for Xbox, it's only playable on Xbox.

You won't find a Play Anywhere key because it's not a Play Anywhere title. You need to buy the game for the platform you want to play on.
If you want to play it on both, you need to buy it for both.
