Is it possible to get smart delivery on physical 360 copies to series S somehow?

That's not what smart delivery is. Smart Delivery is a feature that will automatically install the best version of the game available for your device.

It's not a way to transfer disc based games to digital. The only way to do that is to buy the game again digitally.

But on a series x if you put a 360 disc in doesn’t it still jump to the best version?

Not in the same way. Some 360 games do have enhancements, but those are updates to the existing game itself. They are not a separate version like XB1, 1S, 1X, Series S and Series X games have.

But either way, that's irrelevant as you can't transfer a disc based game to a digital only console.

As I've said twice already, there's no way to get a disc game onto a digital console. You need to buy the game again digitally.
