I unfortunately don't know how much help I'll be since this isn't really my area, but just to cover the basics here...

Have you gone through Settings > General > Volume & Audio Output on the Xbox and made sure everything was connected and set up correctly?

Have you checked all cables, and tried turning off/on all relevant devices?

Have you tested the headset on other devices to make sure it's still working?

The ones that just plug into the controller? Those should just work as soon as you plug them in with no need to fiddle with anything (outside of chat settings to balance audio if you need it, but this isn't that), so I'm wondering now if it's the headset or the controller that might have had something go wrong.

Are you able to try a different headset with the controller and/or a different controller with the headset?

Press the guide button
Scroll over to the speaker icon and click it

Make sure headset volume is up and tv volume is muted

There is a setting in the settings - general - volume - additional section that will let you set it to automatically mute the tv when you plug your headphones in
