What should I do to play a game that needs an xbox live gold or gamepass ultimate subscription to be played, if that subscription is not available in my country
( the games are: sea of thieves, mortal kombat 11, mortal kombat 1 )

You do nothing. If the service is not supported in your country you cannot use it. Any attempt to do so will be violating Terms of Service.
