I have gta5 disc on my xbox one S and every single time around 68% it stops and it says my disk is damaged but its not 🤦

if the console cant read the disc for some reason then it will say that. It could even be a hairline mark you can not see well.

Try cancelling the failed install and install the game offline.
you could also try downloading the game from the xbox app on mobile to your xbox. Try reinstalling an other game see if you have an issue with that
