the chat mixer will only work on a stereo headset. If its greyed out/not selectable then the console isn't seeing the headset as a stereo headset anymore
But I have the audio setting set to stereo decompressed.
Make sure it is a stereo headset
Unplug the headset restart the console and plug the headset back in
Check for updates for the headset from the manufacture
And I tried the update controller thing but that didn't work.
I will try restarting my xbox though.
stereo decompressed setting is nothing to do with that setting your having an issue with. As mentioned the setting will only work if its a stereo headset if its greyed out like you said the console isnt seeing it as stero headset

okay that does not mean it should not be working. It means the reason why it isnt working is because the console is not seeing it as a stereo headset

It didn't do anything.
Probably because every time I turn on my xbox after a long period of time it automatically has the restart screen.

thats means you restarted correctly and didn't just put it too "sleep"

you could also try a other headset on the same controller OR
The same headset on a different controller
That will tell you if its the headset that's the issue or the controller

And/or I can't see the ones I have from searching up the brand?
You should be able to find the brand at least by just looking at them most headsets have brand on them. You need to help yourself. We gave you the options not all those will work but thats what you can do
