Overscan only changes how the very edges of a screen are shown.
Setting that 'wrong' should not make a device unusable. Especially a modern device like an Xbox which uses 'safe defaults' for positioning important UI elements away from the edges

The only setting even close to overscan is "allow apps to add a border" which would not affect video output

That setting will not impact your ability to use your Xbox and does not activate any Xbox-based overscan system
If you follow this other path:
You can click next a couple times and get this screen
If you can see the blue box you’re fine. If you can see the green line then you will be able to see everything
