Was the update for the console or the Microsoft store?

Ok, the best solution then is a factory reset (you can keep your games and apps so you don't have to download everything again) you'll just have to add your account again.

Settings > System > Console info > Reset console > Reset and keep my games & apps

All your games and apps will still be installed, you'll just have to go through initial setup, connect to internet again (if you're using WiFi, you'll have to set that up again), add your account back to the console, and should be good to go
